Ethiopia - Korate - Natural Process
10 oz light roasted, natural process coffee.
Notes of apricot, berry tea, and honey. It is rare to discover a natural/dry process coffee that balances depth and clarity so well.
Korate is both the name of the washing station and the village that this coffee comes from in Western Guji. They exclusively use natural processing, and it’s clear why they have chosen to specialize. Korate works with over 100 small farmers in the area and is sure that these farmers are paid a higher than normal rate to ensure they deliver a perfectly ripe, high quality product. This also makes the processing and resulting coffee more uniform, and cleaner in taste. The cherries all spend between 3 and 4 weeks drying on raised beds.
I found that this coffee brewed perfectly using my favorite brewer, a Chemex. I used my normal recipe of 38g coffee and 600ml of water and knocked it out of the park. I also loved experimenting with Korate on espresso and arrived at my favorite recipe with 18g in and 45 out.
